This recipe for oatmeal cookie granola isn't the healthiest granola in the world since it has sugar, but it is still healthier than some of my other snacks! Plus it is a good way to get a little flax in my diet. You can eat it right out of the oven or use it as a topping on ice cream, yogurt, or put a little milk on it and eat it for breakfast.
This granola is delicious and pretty simple to make. Watch the baking time closely – it is easy to burn.
If you do not have brown sugar you can make some using 1/2 cup sugar and 1/2 Tbs Molasses. Just mix it up until it is nice and brown!
Ingredients for Oatmeal Cookie Granola
- 4 cups oats
- 4 tsp vanilla extract
- 1/3 cup flax seed
- 1/2 cup brown sugar
- 1/3 cup honey
- 1/8 tsp nutmeg
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 4 Tbs butter
Directions to Make Oatmeal Cookie Granola
- Combine the dry ingredients in a bowl.
- Melt the butter in a saucepan then add the honey. Remove the pan from the heat and quickly add the vanilla. Coat the dry ingredients evenly.
- Put the mix on a cookie pan and bake at 300 degrees for 20 minutes (watch this step carefully!)
- Let it cool and break it into smaller pieces if needed

What a great recipe! And I bet you could substitute xylitol for white sugar to make it even more healthy. I mean, the flax is in there! Anyhow, I could also see adding just a few chocolate chips for that late afternoon pick me up!
